You can always tell that it’s spring when the rhubarb is growing. If you harvest it in small batches, you can oftentimes keep it growing into the summer. This way you can make it last for quite awhile. My rhubarb go-to recipes include Rhubarb Pie, Rhubarb Cake and Rhubarb Jam. Today, I’m sharing Rhubarb Sauce made 3 Ways.
These are my favorite recipes for Rhubarb Sauce. The first is the Classic version of Rhubarb Sauce. Second, you will find a version made with honey. It has slightly less sugar and works well if you are trying to reduce your processed sugar intake. The third version is a blend of rhubarb and strawberries. It actually has the least amount of added sugar because the strawberries help to sweeten the sauce naturally.
Start with fresh or frozen rhubarb. If you haven’t planted rhubarb in your garden yet, it’s not too late. You can find rhubarb at your local nursery and some garden centers. Enjoy this sweet tart sauce that you can use as a dessert topper or a sauce for chicken and pork.
- 2 1/2 cups fresh or frozen rhubarb, chopped into 1/2 inch pieces
- 1/3 cup sugar
- 1/4 cup water

Mix all the ingredients into a saucepan. Bring to a boil.

Reduce heat and simmer until the moisture is removed and fruit has broken down (12-15 mins.). Be sure to stir frequently.
This is a lower sugar version of Classic Rhubarb Sauce.
- 2 1/2 cups fresh or frozen Rhubarb, chopped into 1/2 inch pieces
- 3 tbsp honey
- 1/4 cup water

Mix all ingredients into a saucepan. Bring to a boil.

Reduce heat and simmer until tender (12-15 mins). Stir frequently.
This is the lowest sugar version since the strawberries add some natural sugar.
- 2 cups fresh or frozen Rhubarb, chopped into 1/2 inch pieces
- 1/2 cup fresh strawberries, coursely chopped
- 1/4 cup sugar
- 1/4 cup water

Mix all ingredients into a saucepan. Bring to a boil.

Reduce heat and simmer (15-20 mins). Stir frequently.
Now that you have this delicious sauce, what should you do with it? It tastes just like spring in a bowl. So you might want to eat it straight out of the bowl. However, if you must serve it with something, here are some tasty ideas.
Ways to Use Your Rhubarb Sauce
- Spoon it warm over dessert such as pound cake or angel food cake.
- Spoon it over ice cream.
- Stir a tablespoon or 2 into plain yogurt (greek or regular)
- Spread a layer on top of cheesecake.
- Use as a topper for pancakes and waffles.
- Blend some into your breakfast smoothie.
- Bake over chicken or pork roast.
- Make a vinaigrette for salad.
- It’s a perfect side dish for roast turkey in place of cranberry sauce.
- Use it to make homemade BBQ Sauce.
- Spoon it on top of fruit compote.
