Easy French Onion Soup

Can you believe that it’s September?  It’s crazy how quickly the summer flew by.   But this means that it’s time for another bowl of soup.  The Soup of the Month for September is this Easy French Onion Soup.

We have been using a lot of vegetables from the garden for the monthly soups and French Onion is no exception.  It uses onions and garlic.  Simple, but oh so delicious.  I like to use a sweeter onion such as Walla Walla Sweet.  They are abundant right now in Eastern Washington.  You could also use a Vidalia or Texas Sweet.  If you don’t have a sweet onion available that’s okay because any type of yellow or white onion will work in this recipe.

First, however, let’s take a look at the produce that is abundant in September.  We are still in garden heaven and there are lots of fruits and vegetables available this month.

  • eggplant
  • garlic
  • green beans
  • kale
  • melons
  • onions
  • peaches
  • pears
  • peppers
  • plums
  • raspberries
  • spinach
  • summer squash
  • tomatoes
  • winter squash

You could probably add lots of other fruits and vegetables to this list but these are the main ones that I am seeing right now.  What could be better than simple fruits and vegetables with your meals.  So enjoy them while you can because this abundance won’t last much longer.  By next month the list will certainly be smaller.

So on to the Soup of the Month….

An easy to prepare, savory soup.  Simple ingredients but delicious and fillling.

Course: Soup
Servings: 6
Ingredients
  • 1/4 cup butter
  • 3 large sweet onions, thinly sliced (2 extra large)
  • 2 cloves garlic, minced
  • 6 cups beef broth
  • 2 tsp bouillon, optional
  • 6 slices french bread
  • 6 slices swiss cheese
Instructions
  1. Slice the onions and mince the garlic.  Melt the butter on medium heat in a dutch oven or large pan.  Add the garlic and cook for a minute.  Add the onion slices.  Stir to mix the butter with onions.   

  2. Reduce heat to medium low.  Cover and cook until the onions are tender about 20-30 minutes.  Stir occasionally.

  3. Add broth and bouillon to onions.  Simmer on medium for about 30 minutes.

  4. Just before serving broil the french bread slices until lightly toasted.  Flip slices over and cover uncooked side with cheese.  Broil until cheese is melted and starting to brown.

  5. To serve fill a bowl with a ladle of soup and top with a toasted bread slice. 

I hope that you enjoy this Easy French Onion Soup.  It’s not fancy but it is flavorful and filling.  It would make a great first course or a side with a sandwich.  And onions are always available no matter what month or season it is.
